Cookery
We have been lucky enough to organize many authentic Thai cooking
courses for our clients to enjoy. The courses we choose in the various
locations around Thailand tend to focus on teaching the "Spirit"
of Thai cooking so that students can cook authentic tasting Thai
food whether or not they have a recipe to follow. Rather than learning
to blindly follow recipes, you learn to cook with all your senses.
All of the major ingredients in Thai cooking are introduced along
with the concept of balancing the 5-flavor groups to get exactly
the taste you desire. The flavors are bitter, spicy, sweet, sour
and salty. The most important thing is that all of the dishes which
you will cook on the course can be replicated in your own country
with ingredients you will be able to find at your local supermarket.
Therefore, you can astound your friends with delectable Thai cuisine
in your own home. Courses vary in length from a half day to a 3
day course. Some of our Sample Programs,
such as The Home Stay at Mae
Kampong or The Home Stay
at The Elephant Conservation Centre, provide ethnic cooking
experiences with in the day’s activities. If you would like to include
a Thai cooking course in your program, please state on the Requirements
Questionnaire form in the Contact Us
section of the web site.

Massage
A Thai massage can be a bit of a struggle but is surprisingly energizing.
It feels a bit like enforced yoga, as the person being massaged
is twisted and stretched in all directions. The masseur or masseuse
applies pressure on certain points and pushes the joints. They stretch
the person and twist them to stretch certain areas. It does feel
quite weird at the time but feels great afterwards.
If you would like to learn the art of Thai massage, there are many
courses on offer which usually last a few days. One of the best
places learn massage is in Chiang
Mai, where there are many reputable massage schools. You will
be trained by qualified instructors and receive a certificate which
allows you to practice massage – so then there is nothing stopping
you. If you would like to include a massage course in your program,
please state on the Requirements Questionnaire form in the Contact
Us section of the web site.

Meditation
There are many meditation temples and centres in Thailand, some
of which hold meditation classes and retreats in English for foreigners.
The best studies of meditation can be found in Chiang Mai. It is
mainly vipassana ('insight') meditation which is taught in Thailand
. This means observing every sensation, feeling and experience very
closely. It is a system of meditation which is specific to Buddhism,
particularly Theravada Buddhism, which is the school of Buddhism
followed in Thailand . The other meditation system taught in Thailand
is samatha which calms and focuses the mind.
Visitors to a meditation centre should dress appropriately, ie neat,
clean clothing with legs and shoulders covered. White or non-brightly-coloured
clothing is preferred. Men and women are welcome but are separated.
Visitors must adhere to the rules of the temple or meditation centre
which generally include rising early in the morning, fasting until
midday and abstaining from alcohol, smoking and sex. Remember when
sitting or kneeling not to point your feet at anyone as this is
considered impolite. Images of Buddha are sacred so you should also
take care not to sit with your feet pointing at an image of a Buddha.
Women can not have direct physical contact with a monk so be careful
to not touch a monk by accident.
There are sessions for beginners and experienced meditators. It
is possible to do one day courses rather than committing to one
of the longer retreats over a few days or weeks. So if you would
like to cleanse your soul and clear your mind, just mention your
interest when you Contact Us.

interests and abilities. Although different in nationalities, background
and careers, the students are encouraged to honor their uniqueness
while enjoying their mutual artistic interests and the cheerful
spirit in each session. With the warm atmosphere, nice environment
and joyful moments in class, learning comes easy. We can visit any
number of sites worthy of painting or drawing, depending on your
wishes. If this sounds like it is something which you would like

Diving
Diving in Southern Thailand is considered to be among the top 10
scuba destinations in the world. It boasts of crystal clear water,
spectacular reefs and rock formations plus a colourful selection
of marine life.
Phuket is often referred to as the ‘Pearl of the South’ and
for scuba divers it’s certainly the crown jewel of the Andaman Sea.
For divers, the true treasures of the Andaman Sea are hidden below
the surface, where the vast panorama explodes into a virtual symphony
of colors and corals. The warm, clear water draws large schools
of tropical fish and manta rays. The wealth of aquatic life combined
with good visibility will delight underwater photographers and marine
naturalists.
Likewise, from the tranquil splendor of shallow-water coral gardens
to a close encounter with a Whale Shark, the Gulf of Thailand and
particularly Koh Tao provide excellent diving opportunities. Koh
Tao burst into fame as a haven for divers and as a major training
center about 12 years ago. This island offers more than 20 spectacular
dive sites and visitors can enjoy crystal clear water all year round,
with visibility often exceeding 30 metres. Some of the highlights
you can expect underwater are sea anemones, schools of batfish,
barracudas, trevallies & giant groupers. It is only a 45 minute
journey from Koh Samui to Koh
Tao.
Whether you are an experienced diver or a complete novice, we can
organize diving courses that will suit you. The one thing you can
count on is the unforgettable experience of a life time. If you
would like to take the plunge and add a diving course to your itinerary,
please stipulate this when completing the Contact
Us part of the website. Also let us know what diving qualifications
you already have, if any.

Fruit
and vegetable carving
The art of fruit and vegetable carving is performed in Asian countries
such as Korea, Japan and China, but Thai culinary carving is arguably
unsurpassed for skill and finesse. The best masterpieces can be
found in Thailand. Fruit and vegetable carving is a venerable tradition
which has been passed down form ancient times and is considered
one of the ten traditional Thai crafts. It is thus held to be an
ancient art and is used in making food offerings for monks, entertaining
guests, ordinations, weddings, and royal funerals.
This art was the preserve of chefs to royalty and the nobility,
but can now be found in the buffet displays in traditional Thai
restaurants. The master carvers have taught their trade to the new
generation. The fruit carvers use a range of tools built for the
job: very sharp pointed knives with double edged blades, knives
with curved blades, gouges and cookie cutters. To practice this
art, you must show patience, eye concentration and steady hands.
Generally courses in fruit and vegetable carving last for a minimum
of two days. Any one working in the hospitality industry will benefit
from taking this course and will then be able to replicate the results
back home. Let us know if you would like to include this course
in your itinerary when you Contact Us.

We tailor our trips to first-time paddlers and beginners. Our friendly

and the individual attention. All of our programs are hands-on,
educational and fun. Photography courses last from ˝ a day up to
a full itinerary of 2 weeks.
All of our itineraries and programs offer plenty of time for enthusiasts

Trekking & Soft Adventure Tours
Ask anybody who has visited the North of Thailand what they did
there and 99% will tell you they went trekking. Although trekking
is an extremely popular activity, we try to make our trekking programs
more unique by journeying to locations such as Umphang,
(See Sample Program I for
details) which is a relatively unspoiled and undeveloped route.
National Parks offer excellent grounds for fantastic treks, with
a wide range of flora and fauna to see. Have a look at Sample Program
E to find out about trekking in
Khao Yai National Park. Other popular trekking destinations
include Chiang Mai, Chiang Rai
and the misty mountains of Mae Hong
Sorn (eg. Program J).
Ideally, soft adventure programs will incorporate short treks with
bamboo rafting expeditions and adventures on elephant back (eg.
Program A). All our trekking and soft adventure programs are
safe, educational and fun. Our trekking philosophy is to avoid cultural
or environmental impact in order that we have a positive effect
on eco-tourism wherever we go. Treks can be tailored to all fitness
levels as your guide will match your pace to suit the day’s activities.
When you Contact Us, please give us
